Okay, I know your mouth is probably drooling right now and with rightful reason, Marlene couldn’t have taken a better shot! I can’t wait ’till you make this and comment and let me know just how much YUMMMMM your mouth was missing until it met the medley of cherry and guava in a cereal bar :)

It’s quick, easy and full of YUMMMMMM factor.

Cherry Guava Bars (Vegan, of course ;) )

  • 2 cups granola
  • 1 cup apple cider
  • 3/4 cup flour
  • 3/4 cup dried cherries
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup vegan margarine
  • 1/2 **guava paste aka guava cheese (cut into thin slices)
  1. Preheat oven to 350 deg. Grease an 8 x 8 pan w/ vegan margarine
  2. Place dried cherries in saucepan with apple cider and simmer for about 5 minutes, until plump.
  3. Combine 1.5 cup granola, 3/4 cup flour, brown sugar and cinnamon
  4. Cut butter in mixture until crumbly (may use fork, fingers or pastry cutter *easiest*)
  5. Pat half of granola mix into greased 8″ pan to form a crust
  6. Place guava paste slices on top of mixture
  7. Drain cherries (*reserve liquid) and place cherries on top of guava paste slices
  8. Add remaning 1/2 cup granola to the other half of granola mix
  9. Add entire granola mix on top of cherries
  10. Bake at 350 for 30-35 min. Cool. Cut. Devour!

*Reserved liquid won’t be used in this dish, but I say save it because it’s so yummy to drink :)

**May purchase guava paste in the Intl aisle of your grocer or at Caribbean/Latino grocery stores and it looks like this
