Have you gotten whiff of that familiar scent called Spring…Carrying the scent of flowers bloomed, the perfume of lovers musk, the aroma of sunny weekend picnics….ahhhhhhhh I not only smell it…I TASTE it!  And if I was going on a picnic this weekend, this is the  dish I would bring

Curry Chick Pea Spread with Toasted Ciabatta Bread


  • 1 15oz. can garbanzo beans/chick peas (drained and rinsed)
  • 3 clove garlic minced + 1 crushed clove garlic
  • 1/2 cup diced onion
  • 1/4 cup chopped culandro
  • 1 TB curry powder
  • 1 tsp cumin powder
  • dash of Adobo
  • 1/4 cup olive oil
  1. Sautee onion and garlic until slightly translucent
  2. Add curry powder and cumin and sautee until fragrant
  3. Add garbanzo beans and stir just until covered with spices and seasonings, remove from heat
  4. Add ingredients from pan to food processor and pulse for a few until ingredients break down,
  5. Slowly pour olive oil into food processor while processing and blend until creamy.
  6. Add chopped culandro and pulse a few times until incorporated
  7. Add Adobo to taste
  8. Serve with a drizzle of olive oil and culandro as garnish
  9. Rub crushed garlic onto ciabatta bread and drizzle with olive oil
  10. Cut bread into triangle spears and place under broiler until toasted and serve.
